From Domaine Costa Lazaridi in Drama, northern Greece — made from concentrated Sémillon grape must and Sémillon wine vinegar at 6% acidity. Deliberately unaged to preserve its blond color: all the sweet-tangy balance of balsamic, without darkening a pale sauce, a fruit salad, or a piece of fish. Othrys Greek Mountain Tea — Wild Sideritis, 50g
